Tiramisu is a delicious, yet much-abused, dessert. It can be ruined in myriad ways, from an over-long sponge cake coffee soak to strangely disgusting holiday themes with red-and-green decoration gels. However, when it's done right, it can be one of the few sweets in the world that is truly as sigh-inducing as a great back rub. Vivace does tiramisu right. The deep, reddish brown cocoa layer on top resembles rich springtime dirt, and the tangy yet sweet mascarpone cheese layer underneath contrasts so well with the cocoa that it seems unreal. Add the meltingly soft coffee-drenched cake layer, and the dessert reaches the pinnacle of post-dinner perfection.
